Empada de galinha ::: Chicken pie

Adoro ver o Masterchef Australia e esta semana numa masterclass fizeram empadas de carne. A massa tinha um aspecto delicioso e na lista gigante de coisas que quero cozinhar empada era uma delas. E logo no dia seguinte com o que tinha em casa fiz empada para o jantar. A receita da massa é maravilhosa e retirei do livro de receitas da Cookii, um robot de cozinha que nos ofereceram este Natal e que tem sido uma ajuda excepcional. Recomendo! As massas saem sempre muito, muito bem. O recheio inventei e fiz com peito de frango e cebola caramelizada e....é melhor passar à receita :).

Massa
450 g de farinha
100 g de margarina ou 50 g de banha
50 ml de água
50 ml de vinho branco
50 g de azeite
1 ovo
5 g de fermento de padeiro seco
1 gema de ovo para pincelar
1 colher de chá de sal

Recheio
4/5 peitos de frango
1 cenoura
2 cebolas grandes
1 pacote de natas (200 ml)
100 ml de vinho branco
2 colheres de chá de colorau
2 colheres de chá de alho em pó
sal
pimenta

Para a massa: se tiver um robot de cozinha coloque primeiro a água, azeite, vinho, margarina e sal e programar na temperatura 60ºC, 2 minutos. Adicionar os restantes ingredientes e programar velocidade 1 durante 1,30 minutos.
Utilizando uma batedeira juntar na mesma ordem mas a margarina terá de ser derretida. Misturar bem com a batedeira (utilizar as varetas para massa) ou com as mãos.
Esticar a massa numa superfície com farinha. A massa é muito fácil de trabalhar e depois de esticar colocar numa forma de tarte ou uma forma de bolo com fundo amovível ou, se preferir, em forminhas mais pequenas. A(s) forma (s) deverá estar untada com um pouco de margarina. Reservar a massa restante para o topo da empada.

Para o recheio: num tacho colocar azeite e as cebolas cortadas às tiras fininhas e caramelizar. Em outro tacho com azeite selar o peito de frango (cortados aos cubinhos). Temperar com sal, pimenta e alho em pó. Quando os cubinhos do frango estiverem a ficar ligeiramente tostados por fora adicionar cenoura ralada e o vinho branco. Ferver bem para evaporar o álcool e depois baixar o lume, colocar o frango no tacho onde tem as cebolas já caramelizadas e colocar natas e colorau. Deixar assim em lume brando até a carne ficar bem cozida no interior. Retirar do lume e passar grosseiramente com uma varinha para esfiar a mistura. Deixar arrefecer e colocar na forma/forminhas onde já tem a massa. Tapar com a massa restante e furar o centro da massa (para sair o vapor enquanto estiver no forno). Decorar com folhas ou outras formas com o restinho da massa. Pincelar com a gema de ovo.

Vai ao forno a 180ºC cerca de 25 a 30 minutos.

I love to watch kitchen tv shows and the other day I was wathcing Masterchef Australia and they made a beef pie in a masterclass. The dough was amazing and from the to do's list I have make pie is one of them. So without further ado I made a chicken pie. The dough recipe I used is wonderfull, the texture came out excelent to roll out and very tasty. I took it from the Cookii recipe book which is my recent Christmas present, my first kitchen robot and it is a great help for our large family. The filling I made it up along the way with what I had at my pantry using chicken breast, caramelized onions...but let's go to the ingredients list.

Ingredients
Dough
450 g flour
100 g butter ou 50 g lard
50 ml water
50 ml white wine
50 g olive oil
1 egg
5 g dried yeast
1 egg yolk
1 tbs salt

Filling
4/5 chicken breast
1 carrot
2 large onions
200 ml cream
100 ml white wine
2 tbs paprika
2 tbs garlic powder
salt
pepper

For the dough: if you have a kitchen robot mix first the water, olive oil, wine, butter and salt in the 60ºC program during 2 minutes. Then add the rest of the ingredients and mix in speed 1 for 1,30 minutes. 
You can also use your normal mixer and add in the same sequence but the butter should be melted or at least at room temperature.
Strecht the dough in a flour surface and put it on a tin /tins previously with butter. Rest aside and keep the rest of the dough to cover the pie later.

For the filling: in a pan with olive oil add the onions, choped in thin stripes, and caramelize. In another pan with olive oil seal the chicken (chopped in cubes). Season with salt, pepper and garlic powder. When the cubes are slightly toasted add the carrot (chopped or in small slices) and white wine. Boil until the alcohol is evaporated. Then pour the chicken cubes in the pan with the already caramelized onions and add cream and paprika. In medium heat until the meat is well cooked. Turn the heat off and with a food processor mince the misture (not to much, be careful to not make the misture too muchy). Let it cool down and pour in the tin/tins. Cover the pie with the rest of the dough and enjoy decorating has you like. Don't forget make a cut on the center of the pie for the steam to be released when it's in the oven. Use the egg yolk to brush on top of the pie.
In the oven it goes for 25  to 30 minutes (180ºC).
